BURR turns commercial space into Madrid’s "savage burrito" restaurant

Spanish architecture studio BURR turned a former commercial space in Madrid into a fast food restaurant called "brutal burrito". The renovation will juxtapose the street food vendors with the classical arcade that separates the interior space. 

"The idea is to capture this sense of spontaneity and reversibility based on the food project itself, whether it is because of its proximity to street food conditions or for the ambition of change and development," BURR said.

When faced with existing commercial buildings, the architects considered this space to be "a body to be worn". BURR exposes parts of the old structure, such as rough plastered surfaces and floors, to create a primitive beauty connected to the streetscape outside. 

While showing part of the space, BURR also decorated the restaurant with a bright yellow arched partition system, subtly dividing two dining areas. Made of plastic, this design element also refers to the street market. "This detachable, almost one-off condition gives the space a certain spontaneity; a feeling of a place that does not belong there," the design team explained. The idea is that these partitions can also be branded or specifically designed for The textiles designed for special events are transformed.

The facade of the crude burrito follows the idea of ​​not belonging and shows elements that are deliberately mismatched, making the arcade look unrelated to the large windows facing the street.

Compared with the temporary feeling BURR tried to achieve through the dining space, the kitchen adopts a more fixed and practical approach. At the center of the sleek metal kitchen is comal, an adaptation of the traditional pre-Columbian cookware used mainly in Mexico. It is a shiny stainless steel cylinder, divided into two halves, a bakeware and an exhaust hood, only smoke and flame are connected.

Another major element of the kitchen is tortillas, which are appliances developed specifically for the production of tortillas, which are rare outside of Latin America. Diners can see the fresh corn tortillas made from the other side of the protective glass box.

The stainless steel ceiling extends from the kitchen to the entire dining space, providing metal reflections and blurring the difference between the two sides of the bar.
